Menu Plan Monday

Well, for the most part I stuck to my diet last week (I say that as I am sitting here sucking down the yummiest Frappachino ever — obviously not on the diet!).

I actually lost 5 pounds this week, tho! I’m super excited, and motivated to stay away from grains for another week. I didn’t stay away from ALL grains. For instance, one night I had forgotten to get dinner preparations done ahead of schedule and so we made quesadillas on the fly. But for the most part, grains were out of the picture. I didn’t really miss them. I’m sure it helps that I already had cut out wheat. A few weeks off of all grains will be very good for me!

For next week, I think I’ll try to repeat much of last week. We have some serious family drama going on in our extended family, not to mention several activites this week, so I’m going to make this as easy on myself as possible.

Monday:

B — Golden Oats (kids), Cottage Cheese and Fruit (me)

Snack — Raw Almonds (the kids are sick of these as a snack, but I love ‘em!)

L — Leftover Meat Chili and Garden Salad (finish off that avocado before it goes totally mushy).

Snack — Yogurt w/ berries

Go grocery shopping today!!

D — Blackened Catfish (I totally screwed this up last week by using seasoned salt instead of mixing my own herbs. It was sooooooooo salty! And there was just a hint of the good it could have been to cause remorse! Happily, I bought a big pack of fish at Costco and I get to try again this week!) and a big garden salad.

Tuesday:

B — Scrambled Eggs and Apple Slices with almond butter

Snack –

L — Picnic with our homeschool co-op. I think I’ll bring tuna salad and put it on bread for the boys and lettuce for me. Raw Veggies and Dip too. Or celery w/ almond butter, yum.

D — Barefoot Contessa’s Chicken Chili (over rice for the family — I’ll skip the rice and eat it more like a stew. I am thinking I may be tomato-intolerant — oh, say it isn’t so! I’m thinking this dinner will clarify that for me.) and asparagus. Salad too, if I feel up to it!

Wednesday:

B — Cereal Day! The boy live for this day. They eat the whole box in one setting. I don’t know how people afford to eat cereal on a daily basis. Maybe their kids aren’t as big eaters as mine. I’ll make myself cottage cheese again (I’m so on a cottage cheese kick right now. Lovin’ it!)

L — Friends over for lunch today. Serve Chicken Chili leftovers (so good as leftovers, better than fresh!) with cheese, sour cream, basmati rice. Maybe carrot sticks and apples for the kids, salad for grown ups.

Snack — Raw Almonds :)

D — Make a pot roast in the crock pot, green beans, and Huge Garden Salad

Thursday:

B — Soaked Steel-cut Oats

Snack — Oranges

L — Go visit my dad at his school today. Bring him leftover pot roast.

Snack — Raw Almonds

D — BBQ Salmon, steamed broccoli, garden salad

Friday:

B — Eggs, to order

L — Leftover salmon in a garden salad, fruit and yogurt.

D– Bunless Cheeseburgers with veggies that are left in the fridge!

Saturday:

B — Orange Juice Smoothies (oj, berries, yogurt, protein powder, almonds)

L — We will be at a daytime wedding today for lunch.

D — Mexicale Chicken (I didn’t get this made last week!)

Sunday:

B — Soaked Oats for kids, cottage cheese with fruit for me

L — We are taking a 12 week class at a neighboring church that makes church stretch out into the afternoon. They actually feed us! And I was able last time to find plent to eat that was gluten free, surprisingly! (They had snack-y stuff like string cheese, jerky, apples, carrots, etc.)

D — Chicken Cheddar Cobb Salad

Menu Plan Monday

‘Tis the season to crank up the grill!  I’m celebrating by cooking lots of stuff outside this week.  I also had a bit of wheat last week with no reaction, and so am planning to buy some sprouted wheat bread and try it this week to see what happens!  Maybe that’s why I’ve been so “lucky” in not getting “glutened” over the past few weeks — maybe it’s me that’s changed, not the cross-contamination in restaurants or people’s homes.  Here’s to hoping my stomach has healed (I’m not Celiac, just discovered wheat was hurting me a lot.  Walnuts and almonds used also to give me fits and I can eat these fine now, so I am hoping the same will go for wheat, eventually.)

Monday:  Scrambled Eggs, Buy lunch at TJ’s, Chicken Wings (made with gluten free sauce given to me by a friend, called Red Hot) with celery sticks and salad

Tuesday: Irish Oats, PB and J and raw veggies with hummus, Grilled Salmon with steamed green beans

Wednesday: Cereal,  quesadillas and apples w/ pb, Grilled Chicken with zucchini

Thursday:  Eggs, Cold Pesto Salad, Grilled Lamb with mashed potatoes and a salad

Friday:  Soaked Oats,  Leftover veggies w/ hummus and smoothies, Chili in Crockpot

Saturday: Eggs, Leftover Chili

Sunday:  Golden Oats, out to lunch, Find Stuff around the house
for dinner

Menu Plan Monday, April 6

Once again, we missed several of our planned meals last week. The week was so busy, I don’t even know where it went and I don’t know why we didn’t eat all these meals. Planning is easy this week, tho, and grocery shopping will be cheap since I have much of the stuff still around.

This week, a couple of the kids and myself are planning a few days out of town to visit my sister and her new husband! I am deliriously excited to see her first apartment!

I’m a little freaked out about trying to eat gluten-free while visiting my sister and without being a nuisance. Luckily, she’s my sister, so she’s very understanding!!

I know that it will be worth a little preparation so that I won’t be sick and grumpy while visiting. I think just coming prepared with some snacks and emergency gluten-free protein bars (ThinkThin Brownie Crunch bars from Trader Joe’s are sooooooo yummy!) and with my sister’s trying to be sensitive to my issue that things will work out fine. I’m actually considering bringing one of my own pans to cook with…ack! I feel crazy with this stuff sometimes, but when the tiniest bit of gluten has made my tummy do somersaults for hours and my brain pop back into a fog for 2 days, it pays to be somewhat vigilant, I guess. I’m thinking worst case scenario I’ll lose a few pounds — and how could THAT be the “worst” case scenario? ;)

Monday:

Gluten Free “crepes” (crepe recipe from here — I tried one of these while making omelettes last week ust to test it out and it worked great! — and filling/topping ideas from here)

Bean and Cheese Tostadas

Spring Rolls (I’m going to try the shrimp w/herbs and broccoli slaw, along w/ peanut sauce) and a yummy salad

Tuesday:

Soaked Oats

Take Daniel out to lunch, pack lunch for CJ and Micah — salami and cheese and apples

Split Pea Soup w Millet Biscuits

Wednesday:

Eggs and Bacon

To Go lunch — yogurt, carrots, rice cakes w/ pb

Chicken Enchiladas and steamed aspargus

Thursday - Sunday:

Take with me: lunch/snacks for me and the kids in the car Thursday (Rice Cakes w/ peanut butter, hard-boiled eggs, string cheese, fruit), protein bars, snacks, Rice Chex, canned chili, prepared dry mix for cornbread,

Leave here for dad and kids: Rice Chex, eggs, oatmeal, cheeseburgers, Split Pea Soup leftovers, chicken enchilada leftovers, Trader Joe’s frozen reheatable meals

Menu Monday

The weather is beautiful; we’ve planted our garden. This can only mean one thing: soup will not be an option for dinner much longer. We’ll celebrate and say goodbye to the colder seasons by eating soup a few times this week!

Chili in Crockpot and Corn Bread (bring to church for pot luck) (My friend Tonya mentioned that Nourishing Traditions suggests soaking corn meal in lime overnight before making cornbread. I would like to try this! My batter for Monday’s cornbread is already made, but perhaps for the weekend’s cornbread-to-share I’ll try soaking. I’d love to hear any tips you have for making cornbread healthier — besides cutting out the sugar — I like sweet cornbread!)

Sunday Dinner: I’m going to try Gluten Free Mommy’s Steak Salad recipe. I have enjoyed EVERY SINGLE recipe I’ve tried from her site, and have no doubt this one will please as well. Since we are visiting my injured MIL this evening, I may bring large tortillas along for those who would like to make this a wrap. Perhaps I’ll serve this with the “blood oranges” my boys have found so enticing lately.

UPDATE:  The steak salad was great and is sure to become a summer staple around here!

Between the long weekend and illness in our home, I have not done any planning or shopping yet! After going to breakfast this morning we’ll go to the grocery store :)

Here’s the bare bones list:

Wednesday

Go out to eat for breakfast, Chicken stew from Dedra – woo hoo, Lentil Soup

Thursday

Golden Oats, leftover lentil soup, Lasagna

Friday

Cereal, Smoothies and leftover lasagna (maybe, unless there was enough to freeze for another full meal later), Chicken Oreganato

Saturday

Pancakes, bean and cheese tostadas, cheeseburgers

Sunday

Eggs, bring Spicy Beef n Beans to Hernandezes, stuff for cookies too?

Menu Plan February 11th

I’ve decided to have leftovers for lunch often this week, to save me planning and keep more variety in our evening meals.

Monday:

Breakfast – Waffles

Lunch – Leftover Root Cobbler or cottage cheese w/ mandarin oranges, hummus with tortilla chips

Dinner – Gluten Free Mommy’s Fish Stew

Tuesday:

Breakfast – Soaked Oats

Lunch – Leftover Fish Stew, yogurt w/ berries or smoothies

Dinner – Chicken Soup

Wednesday:

Breakfast – Omelets

Lunch – Leftover Chicken Soup

Dinner – Cheeseburgers

Thursday:

Breakfast – Cheerios for kids (not gluten free), Yogurt with berries for me

Lunch – Chicken Salad Sandwiches (Thanks to a tip from my gfcf email group that the next 20 recipes posted would win something from Blue Dominoes, I quickly cut and paste one of my gf recipes and won a free bag of Anna’s breadmix! I can’t wait to try it.)

Dinner – Split Pea Soup (This is a Barefoot Contessa recipe recommended by a friend. I think the only change I’ll make is using rosemary instead of oregano, since I have fresh rosemary here already.)

Friday:

Breakfast – Soaked Oats

Lunch – Leftover Split Pea Soup

Dinner – Bean and Cheese Tostadas

Saturday:

Breakfast – Eggs, to order

Lunch – Leftovers or find something snack-y!

Dinner – Chicken Enchiladas (This has been coming out well the past few times I’ve tried it, and I’ve even added spinach in! I’ll try to record the amounts this week and link to the recipe soon.)

Sunday:

Breakfast – Golden Oats

Lunch – go out to eat

Dinner – Chicken Enchilada Leftovers

Snacks: Chocolate Chip Cookies, kale chips, tortilla chips and salsa

Menu Plan Monday - January 28, 2008

After looking at Womanly Pursuits’ ideas for Menu Plan Monday, I really began to ponder why we don’t work more of Nourishing Traditions ideas into our meals here at home??? The fact that my stomach has demanded I go gluten-free should be the perfect opportunity to help myself and the family steer clear of such high-carb eating and try some more ancient whole-food eating, right?

Well, this week, my attempt at eating more Nourishing Traditions-like, consists of these little baby steps:

1. NO breakfast cereal this week (with one son’s birthday last week and another coming up next week, we’ll have enough cereal to not miss this week)

2. We’ll have soaked oats 2x for breakfast!

3. We will be making chicken broth the Nourishing Traditions-way.

We’ll also have fish twice this week for dinner, though I’m not sure the fish I purchased would be completely acceptable by Nourishing Traditions standards. And I am finally back into making kombucha again. I’ll just have to see if the kids will drink any of it!

Baby steps are good. I’m not so good at big steps anyway. The feeling of failure that often comes with trying to make big steps causes me to go one step forward and two steps back! Instead, I hope to look back over 2008 and see that little by little we made some significant changes…

Monday –Breakfast: GF Waffles w/ Grade B Maple Syrup (I’m so excited to try Grade B instead of Grade A as I hear it has a more maple-y taste!)

Lunch: PB & J on gf bread

Dinner: Tacoburgers (we’re going to try and make this like Jimboy’s — a hamburger patty, cheese, mustard, lettuce and tomatoes, all in a corn tortilla sprinkled with parm cheese), sauteed zucchini, mandarin orange salad

Tuesday —

Breakfast: Soaked Oats

Lunch: Salami, Cream Cheese, Crackers

Dinner: Chicken Soup

Wednesday –

Breakfast: Eggs

Lunch: Leftover Chicken Soup

Dinner: Striper Fillets w/ steamed asparagus and salad

Thursday –

Breakfast: Golden Oats

Lunch: Leftover Chicken Soup

Dinner: Glutenfreemommy’s Salmon over Spinach w/ green beans (I was going to try this last week, but after making homemade worchestershire sauce on the same day, I just had to find a way to incorporate the sauce into dinner. I marinated my salmon instead in this homemade bbq sauce — it was totally yum).

Friday —

Breakfast: Rice Cakes with Peanut Butter and Banana Slices

Lunch: Smoothies

Dinner: Enchiladas with a spinach salad

Saturday –

Breakfast: Soaked Oats

Lunch: Leftover Enchiladas

Dinner: Lentil Soup

Sunday —

Breakfast: Eggs

Lunch: Go Out!

Dinner: Leftover Lentil Soup
