Menu Plan for Week of March 9, 2008

It’s been awhile since I’ve had it together enough to post my Menu Plan Monday meme on time! Here’s the (mostly gluten free) plan for this week:

Monday:

Breakfast — Soaked Oats

Lunch — Cheeseburgers w/ no bun, apple slices

Dinner — Chicken Enchiladas

Tuesday:

Breakfast — Smoothies

Lunch — Chicken Enchilada Leftovers and veggies

Dinner — Split Pea Soup w Millet Biscuits

Snack for Book Club: Hummus and Raw Veggies, Coffee and Tea

Wednesday:

Breakfast — Omelettes

Lunch — Tortilla Chips and Veggies with Hummus
Dinner — Leftover Split Pea Soup w Millet Biscuits

Thursday:

Breakfast — GF Waffles

Lunch — Pesto and Rice Pasta Salad

Dinner — Sweet n’ Sour Chicken w/ a salad

Friday:

Breakfast — Soaked Oats

Lunch — Leftover Sweet n’ Sour Chicken and salad

Dinner — Pot Roast in Crock Pot

Sat/Sun (for boys to eat while I’m out of town):

Leftover pot roast

Mac n’ Cheese

Chips and salsa

Sunday Dinner: I’m going to try Gluten Free Mommy’s Steak Salad recipe. I have enjoyed EVERY SINGLE recipe I’ve tried from her site, and have no doubt this one will please as well. Since we are visiting my injured MIL this evening, I may bring large tortillas along for those who would like to make this a wrap. Perhaps I’ll serve this with the “blood oranges” my boys have found so enticing lately.

UPDATE:  The steak salad was great and is sure to become a summer staple around here!

    I think it’s funny that your ‘one beggar’s bread’ these days is made without wheat!! In America bread so often means white flour processed bread - but there is so much more to life than that!
    Aren’t you glad God made variety and we live in a country where the choices of bread is plentiful.
    Of course, I am talking about EATing bread.
    Your blogs name of course is referring to God’s grace to a needy people - but it just struck me funny.

    I know, isn’t the “bread” theme a little silly right now? I thought about changing it to “gluten free bread,” but 1) that makes it lose some of the spiritual significance and 2) gluten free bread is pretty yucky to me. I am thinking of at least changing that photo at the top!
